In partnership with Quicke’s, we are proud to announce the introduction of our exclusive Cave-aged Clothbound Cheddar, which is now visible on guided tours through the cave. This unique collaboration blends centuries-old cheesemaking traditions with the awe-inspiring natural environment of one of Britain's most famous prehistoric landmarks.
Cave-aging is a method that has been used for centuries to enhance the flavour, texture, and aroma of cheddar. The cool, stable environment of Kents Cavern provides ideal conditions for the cheese to mature. The consistent humidity and temperature in the cave allow the cheddar to develop a bold, robust flavour profile that is both rich and complex - characteristics that simply can't be replicated by conventional ageing methods.
In the caves, wheels of clothbound cheddar are stored in a specially designed cabinet, allowing visitors to catch a glimpse of the ageing process on their guided tours. Over time, the cheddar absorbs the natural ambience of the cave, adding a layer of depth to its already rich taste.
The cheese began the maturation process in the caves in October 2024. Once fully matured, this special cheddar will be available for purchase from Kents Cavern from Wednesday 4th December in the Kents Cavern onsite shop. Just in time for Christmas!
